Auxiliary begins 2026 deliciously

Oxnard—It’s 2026, and the Oxnard Eagles Ladies Auxiliary is cooking a lot and ready to serve the masses.

IT’S breakfast time at the Eagles, as Shelly Knappenburger and the Scrambled Egg Crew are cooking up a storm with all the proceeds going back to organizations who serve the community. She said the breakfast proceeds go into the Auxiliary General Fund and pay their bills.

“We have our ham and croissant sandwiches, chicken fried steak, and eggs and toast,” she said. “It’s your standard breakfast fare, and everything is made with a lot of love.”

Tracy Williams was busy cooking, featuring chorizo and eggs.

Shelly made the fresh salsa this morning,” Tracy said. “You need onion and tomato for starters.”

Tracy has been an Eagle for “probably” 22 years and loves cooking eggs.

Eternity Lucero cooked the Pancakes and French Toast.

“I usually have a throwaway pancake, or I have my boyfriend eat it,” she said with a giggle.

 

Nathaniel Ruiz said he’s doing whatever Eternity tells him to do.

“In the morning, I’ll crack eggs, about 1.5 pitchers,” he said. “I also help in the back, and I do whatever needs to be done.”
