Sometimes I feel lazy when I cook. I don’t necessarily want to start a big endeavor, but I do want something tasty to eat.
I DON’T want to order out or pick up food because I would always rather eat homemade food. So, when I find myself in a conundrum I think about the basics. And at its most basic, nachos are incredibly delicious. Cheese melted on chips is a winner any day. But thankfully I had a couple of things around the kitchen to really spice things up. I didn’t take much to make these nachos extra special and the whole thing took about 15 minutes. I made these on a sheet pan to feed my whole family. Let’s make nachos!
INGREDIENTS
- Chips
- Shredded cheddar cheese
- Crumbled cotija cheese
- Black beans
- Sliced Jalapeño
- Sliced red bell pepper
- Diced tomato
- Sour cream
- Sliced limes

Preheat your oven to 375°. Lay out a layer of chips on a baking sheet. Open a can of black beans, strain, and using a spoon spread evenly over the chips. Then evenly spread out the red bell pepper, jalapeños and finally the cheese over the chips and place in the oven until…
